Arròs negre (Black rice in Catalan) is a dry rice dish similar to paella.It is prepared with cuttlefish or calamari, onion and garlic, but the broth may be made from other seafood. Rice is added to that broth, and it's cooked until water evaporates. The dark aspect is because squid or cuttlefish ink is added.A version using a tiny pasta called fideus, and not rice, is usually served with allioli.
