Japanese Chinese cuisine is a unique style of Chinese cuisine served by Chinese restaurants in Japan. Many of these restaurants are Japanese-owned, though there are some which are operated by overseas Chinese or Japanese of Chinese descent.Though formerly Chinese cuisine would have been primarily available in Chinatowns such as those in port cities of Kobe, Nagasaki, or Yokohama, Japanese-style Chinese cuisine is now commonly available all over Japan. As Japanese restaurants are often specialized to offer only one sort of dish, cuisine is focused primarily on dishes found within three distinct types of restaurants: Ramen restaurants, Dim sum houses, and standard Chinese-style restaurants.

Today I am going to transform this Japanese favorite into a Kuih Raya and I am going to fried ’em and steamed ‘em at the same time. This is call Gyoza Raya.

Omurice is a Japanese rice omelet that can be prepared in different ways. It can be fried rice wrapped inside an egg omelet or an omelet stuffed with pieces of chicken, stir-fried veggies and rice. No matter what's inside, omurice is always topped with ketchup in different designs and swirls.

A well-established Japanese photographer told me not so long ago that in his home country they eat Kentucky Fried Chicken for Christmas dinner. Somehow, the Japanese seem to have gotten it into their heads Americans eat Kentucky Fried for Christmas. Thus every year there is a mad rush to order Kentucky Fried Christmas Buckets. [...]
