Jewish cuisine is a collection of international cookery traditions linked by Jewish dietary laws (kashrut) and Jewish holiday traditions. Certain foods, notably pork and shellfish, are forbidden; meat and dairy are not combined, and meat must be ritually slaughtered and salted to remove all traces of blood. Wine and bread have special rituals associated with them. Due to the wide geographic dispersion of the Jews, Jewish cooking is extremely varied, with the availability of ingredients and local influences leaving their mark on how the food is prepared and presented.
